Brussels Sprouts, Bacon & Cheese Scrambler

  • 1 microwavable bag of Queen Victoria Brussels Sprouts 16 oz
  • 12 large eggs lightly beaten
  • 6 slices bacon cooked crisp and crumbled
  • 1/2 cup cheddar cheese shredded
  • salt and pepper to taste
  • cooking spray


  • Remove cooked and cooled Queen Victoria Brussels Sprouts from their microwavable bag and cut Brussels Sprouts in half or quarters (set aside).
  • Spray large skillet with cooking spray and over medium-high heat add cut Brussels Sprouts to skillet.
  • Saut√© Brussels Sprouts for one minute and add eggs, crumbled bacon and salt and pepper to taste.
  • Gently scramble eggs and continue to cook over heat until eggs are set and bacon and Brussels Sprouts are evenly distributed through the eggs.
  • Remove skillet from heat and top scrambler with shredded cheese. Serve immediately.
